A maiden voyage in potato salad

It’s been a hectically busy weekend and I feel it all over. Sheesh! I am exhausted.

Friday we went for our check-up of course and then thankfully the rest of the day we got to hang out and chill with Tammy in the pool. :-D I may soon need a rope to hoist myself out of the pool, but it’s still a fabulous way to spend a Friday in whale season.

Saturday I went to ExMi ‘s kid’s 2nd birthday party which was also fun. I see it’s customary to have more grown-ups than kids at these events? I can live with that. Thank goodness for all the dinosaur themed sugar on offer or I might have conked out on the lawn from the heat! ;-)

Sunday I went to a braai at Phillygirl ‘s house. Everyone brought something and I got to make potato salad.

Now let me tell you that me and potatoes have a bit of a history. I love eating potatoes, but cooking them isn’t really my strength to be honest. I am always in too much of a hurry and end up under-doing it somehow (even when I follow printed instructions!). So imagine my surprise when I go offline for a few hours and come back to find myself nominated to make potato salad – Eeeep!

Luckily for everyone involved I have a mother who can do everything. I asked her how she would do it with strict instructions to leave NOTHING out, even if she thought it was an obvious step, it wouldn’t be obvious to me. As an extra precaution I made her stab the taters after they were boiled to make sure they were cooked. In the end the epic potato salad came out great – I was so proud (and grateful! And so would you be if you’ve had to endure some of my previous undercooked potato dishes). :lol:

I might even try it again soon…

Even though I am so tired after all the running around and socialising of this past weekend, it was really great to see everyone again. Gimme a week to rest up and I’ll be ready for round two.

  1. Potato salad is a funny thing. No two people make it exactly the same. It is pretty versatile though. My mom cooks the potatoes whole and cubes them after cooking. She also adds onion and drowns it in mayonnaise. I don’t usually add onion (kids don’t like it) and I add less mayonnaise. I also cube my potatoes before cooking and then I don’t cook them for too long. Cuts down on the messy work at the end.

  3. Guess what? I made potato salad on Sunday too! Weird!

    Girl…you must be farking exhausted. I’m starting to feel more and more tired and I’m quite a way behind you!


  4. Momcat, my mom also cooks it whole (in the skin) and then dices it after it cools down. then she adds finely chopped onion, egg and mayo. I left out the egg because a lot of people don’t like that and you never know what squishy will protest to for me either. We usually just add some parsley on top to pretty it up a bit too.

    Tamara, rest assured – I will NEVER make a pink potato salad! :-P

    acidicice, I am! Grief, I can hardly stay awake long enough to get in bed for my afternoon nap these days (working my own hours over this period has been a God-sent!).

    Roughly, my routine looks like this at the moment: Get up at about 5:00, go have a bath and breakfast and lounge around the house looking like someone who’s still waking up till 08:00. Get dressed, drive to work at 08:15. Get there at about 09:00 – look busy till 14:00 if possible, longer on Thursdays. Drive home thinking about taking a swim in the pool to cool down. Get home at about 14:30 or 15:00…decide to take a nap before swimming. Wake up at 17:00, have dinner watch a tiny bit of TV and back in bed by 20:00. Snooze for 2-4 hour stretches between bathroom breaks.

    You know, before this I used to sleep between 4 and 5 hours a day (less over weekends) – now I can easily clock 11 and still be tired! :-| I must be banking sleep, right?
